A sensational modern European dining experience in the heart of the CBD very much befitting the name "Grand Brasserie".


Leaving the hustle and bustle of King Street you are instantly transported to a modern interpretation of the grand old dining rooms of Europe with high ceilings, large chandeliers, warm lighting, crisp white shirted staff and the pleasant hum of clinking glasses and chatting diners.

The Charles Grand Brasserie is Etymon Project's second venue to open, after much loved Loulou Bistro, Boulangerie & Traiteur in at Blue at Lavender Bay Milsons Point. Executive Chef Billy Hannigan has create a menu that brings together flavours, techniques and dishes from throughout Europe into a modern menu grouped in the classics.

All dining starts better with champers and The Charles bubbles list is quite the read, 6 pages dedicated to champagne and 1 page to sparkling from around the world. All your favourite houses are present, but if you want to try something a little different, talk to the sommelier and let the adventure begin.

🥂 Favourite: Billecart-Salmon Rosé

Like all great European dining, the food is best enjoyed by sharing and The Charles menu lends itself very well to ordering a selection of dishes for the table. Seafood entrees including kingfish crudo and confit ocean trout are light and fresh, but the table-side prepared Steak and anchovy tartare is not only theatrically wonderful it's the dish to return for.

The main dish selection has every taste covered with vegetarian, seafood, pork and lamb, but there are two staring attractions Jacks Creek wagyu rump cap MBS9+ and the Whole dry aged Aylesbury duck à la Press.

The Charles does dessert on an equally grand scale with a dessert trolly featuring a selection of cakes, petit fours & sweet treats. Get your cameras ready as the showstopper is wheeled up to your table for you to make your selection (correction selections).
